SO KETO COOL:
Holy Smokes, look what i made. It was a hot coffee with butter. Then i added 1t xanthan gum and blended. NICE thick. Then i thought, it is way too hot out to drink hot coffee, so i added ICE ICE BABY! YES, this is the best thing since a chocolate shake! The xanthan gum helps to prevent oil separation by stabilizing the emulsion!

I'm going to experiment and make coconut milk shakes, cream shakes etc, i need to find extract/flavors and blend with your choice of sweetener.
