Wifey, in many areas of Spain, toast with grated tomato is very common, especially for breakfast. It is literally grated raw tomato, which is spread on bread with olive oil and a little salt. It is usually eaten like this or with a slice of serrano ham. In my case, I do not grate the tomato but simply grind it in the blender.

Wifey, I think it's more a matter of texture than taste. It turns out juicier, and you don't have to bite into the tomato slice.

Wifey, it is easy peasy! Wash a couple of tomatoes. Remove the hard part from where the stalk comes out, and grind them in your blender. Toast the bread (this is optional), add a drizzle of olive oil and then spread the blended tomato on top. Add a little salt. Eat immediately because the blended/grated tomato tends to moisten the bread, and depending on the type of bread, it may be less pleasant.
What else to add to your toast if you want it to be more complete? The same you would add to any toast with tomato -- some thinly sliced sausage (in Spain, it is typically the "serrano" ham, but I guess it is difficult to find in the United States), cheese (parmesan, cured, feta), avocado. Enjoy!!

By the way! The level of grinding is also important: it should not be excessive -- we don't want to put tomato soup on your bread! You should notice small bits of tomato or a certain texture. However, there are tastes about the size of the chunks, so I will leave it to your experimentation.
