Also, the added seeds seem like they’d create a nice outer crunch factor!! 

Yeaaay' someone has better results with sourdough than I have yet to achieve. But yesterday my modest little proofing bag/heat pad, temp regulator arrived, so will make my next batch soon. Giving the equipment time to air out in fresh air and sunshine because I detected a strong odor of petroleum distillate when I unpacked it. My kitchen is cold and I found it too annoying trying to get a stable temp using the oven and light in it. What a beautiful loaf you've made here.

Moopie, my router is in the living room, way too close to where two big dogs lounge...one will eat anything. ;-). He's a sweet, obedient fellow but obsessed with food and can't control those urges. He'd try to eat raw dough and probably choke himself dead.
