that would be awesome, I'll try making my version of I can't find some of the ingredients.. salty muffins sound definitely interesting! :)

for 12 muffins you'll need 7 eggs, 200g spinach, 200g ham and a tablespoon of pesto genovese (don't know if it's a thing outside italy? it's a blend of basil, pine nuts, evo oil, parmesan cheese and other herbs); beat the eggs and add the other ingredients, then transfer the batter in a muffin tin and bake at 350F/180C for 20 minutes :) you can change the ingredients as you like!

heey thank you so much for this, it was fast and simple, I've seen some pesto combination around that I could try using.. If i succeed and they look decent I will post some pics :) ..oh , you just remind me of Italy and how nice is it over there, I also had an Italian bf from firenze and sometimes he would cook and we would spend the day talking and laughing and having long sobremesas food is not just about the taste but also the company :) ..
